Cindy Lou’s chili lime seasoning online shopping and awesome BBQ recipes: Cooler Method: Line a cooler with a large food safe bag. Pour cooled brine into the bag. Put turkey, breast-side down, into the brine. Pour more ice over the turkey to keep cool overnight. If needed, add more water to completely cover the turkey. Seal the bag and close the cooler; sit overnight. Refrigerator Container Method: Use a large food container (with a locking lid) that fits in your refrigerator. Placing the turkey in the container: For vertical containers, place neck first with cavity facing up. For horizontal container, place breast side down. Pour the cooled brine over the turkey making sure to fully submerge and filling the cavity. If needed, add more water to ensure the turkey is completely covered. Place the locking lid onto the container and refrigerate overnight.

Injection Sauce Directions: Take one cube of butter and melt it in a sauce pan on medium heat, careful not to over heat the butter and burn it. Smash 4 large cloves of garlic and add them to the melted butter and let the garlic infuse into the butter for at least 5 minutes, the longer the better. You can also add seasonings to the butter such as the dry rub you are using on the outside of the tri-tip. Once the butter is infused with the garlic, either strain or remove the garlic from the butter. The butter is now ready to be injected into the tri-tip. You will want to let the butter cool a bit but not too much or the butter will thicken and you won’t be able to inject it into the meat. This is a relatively simple injection sauce. Be creative and add your own seasonings.

Grilled Lemon Chicken with Roasted Vegetables Over Croutons Directions: Take the giblets out of the chicken and wash it inside and out. Remove any excess fat and leftover pinfeathers. Toss the onions, potatoes and carrots with a little olive oil in a small roasting pan. Place the chicken on top and sprinkle the inside of the cavity with salt and pepper, or your favorite dry rub. Place the lemons inside the chicken. Pat the outside of the chicken dry with paper towels, brush it with the melted butter, and sprinkle with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Roast for 1 ¼ to 1 ½ hours, or until the juices run clear when you cut between the leg and the thigh. Cover with foil and sit at room temperature for 15 minutes. (The vegetables may burn, but the flavor is good.)
